Memorial Day, Weekend Update, Meal Planning, and Overnight Oats!

I want to say thank you to the men and women who have died while serving our country. You will never be forgotten, and will always be cherished in our hearts, forever…

weekend recap:

DSC00640 DSC00585 My weekends start with a delicious cup of snickerdoodle coffee. I’m telling you- Marshall’s has some good eats, if you keep your eyes open! I’m trying my best to not reach the bottom of the bag!.. =[

DSC00683 and cut up my pineapple, that was super duper juicy! [side note: have you ever tried pineapple’s sprinkled with salt? My MIL told me that it will bring out the sweetness, and also helps my hubby eat it, without his tounge getting all bumpy… Well, we tried it, and it was… different!~ It did help with hubby not getting allergic bumps on his tongue, but guess what- I got the bumps on my tongue, after adding the salt. So, next time, no salt for us! Hubby said he will sacrafice himself! *_* )

The weekend was filled with planning! Hubby and I sat down, and decided that we needed a little challenge to get us back on track. We will be doing a 30 Day Challenge for June! Here are the rules to our challenge:

  1. Workout 4 times a week: Our schedule is: Tuesday, Thursday, Saturday, Sunday
  2. We cannot weigh ourselves the whole month!
  3. No processed Foods! ( All packaged: chips, cakes, candy. Soda, juices that are concentrated,etc)
  4. No refined Carbs ( white bread, white rice, etc)
  5. Start your day, by waking up at 6A.M. ( This is a biggie for me… like many of you know, I run on west coast time… )

2 ways to keep us on track:

  1. Schedule the workouts: Hubby is taking care of this
  2. Meal planning: This is all on me!

Once I get the Mr. to give me a set schedule for the workouts, I will post them up to share with you!

After our 30 Day Challenge, if we are both successful with staying on track with the workouts and eating right- we will have a limit of $100 to spend on anything except food related!! And it can only be 1 item! For me, I will keep track on sparkpeople.

Meal planning was time consuming, but I think will really help to keep us both on track. I started off by going to my favorite bloggers, and got some help from them. All my meals that I am sharing with you are for dinner. Breakfast will consist of either eggs or overnight oats ( I just fell in love with it, and will share with you on that, later). Lunch will either be leftovers from the night before, or something easy to make. I want to keep it simple for breakfast and lunch.

Meal Plan for the week 5/27-6/2

Sunday: 

Saucy turkey meatballs

( inspired by Alton recipe) with roasted Brussels sprouts

Monday: Brother’s Birthday Dinner
Tuesday:

Black eyed peas soul burgers

Chili Oven Sweet Potato Fries, Side Salad

Wednesday: Garlic Shrimp and Roasted Asparagus
Thursday: Saucy Turkey Meatballs, Quinoa Salad
Friday:

Chicken sabroso ,

Garlic Skinny Mashed Potatoes , Bean Salad

Saturday NO COOKING DAY! Yay =]

These Saucy Turkey Meatballs are so delicious! They are light, healthy, and full of flavor. Another plus, is adding the frozen spinach helps keep the meatballs super moist! Adding in a side of brussel sprouts, that I did on the stovetop, was super easy to do!

*Tip: shape your meatballs small, so you can feel like your eating a lot, without over doing it! =]*

I had my first try with overnight oats, and OMGOSH! I really must of been living under a rock, because these oats were out of this world good! I made them without yogurt, because I didn’t have any, and I’m trying to not have too much diary because I get yucky mucus buildup… I know.. TMI…

DSC00799 Overnight Oats 2 servings: 1 cup of dry oats, 1 cup of almond milk, a splash of vanilla extract. Get all the ingredients into a bowl. Cover it up, and pop it in the fridge overnight ( hence the name, overnight oats… )  When you are ready to eat it in the morning, take it out and seperate into two bowl. You can add more milk if you like. Ours were perfect without it.

DSC00801 I topped it with some walnuts and Strawberry Chia Jam. After, eating a few bites, I added in a teaspoon of almond butter, and it brought the whole thing together! Hubby says he may not be able to handle this everyday, but as for me, this is it! I LOVE it, and will be experimenting with different toppings~! YAY!~

Last thing before I go:

Happy birthday to my brother, Ben! He turned 21 years old today… I pray that he starts his new adult life with setting goals to become the best man he can be!~ May the Lord guide him to see that he can do anything he puts his mind to. Be healthy, and always remember that he is blessed to have his family, who loves him, more than anything in this world. God bless him, and many more birthday’s to come! =]
