Fun times in Ikea!

I had wanted to get this out last night, but after a long day of running around, I was exhausted to even turn on my laptop. My day was filled with lots of waiting, and not knowing what to expect. You see, I was in a new york city courthouse, and in places like that, you wait till you are called upon and speak when you are asked to speak. It wasn’t the best place to be at, but without going into detail, I left the courts happy.

My biggest highlight of the day, was indeed IKEA! How do you not like this place? I can say that since the place wasn’t packed as usual, going around the store, was a bit more enjoying! Here are some pictures that I took while there:

Once I saw the IKEA flags, I got a rush of excitement that I usually get when I arrive at Six Flags Great Adventures!

I thought the colors of the flowers and the vase looked so pretty! My two favorite colors: Pink and Green!

I took this picture after seeing the Eiffel Tower all lit up. I have a thing with the Eiffel Tower! As you can see in the next picture…

This was taken in Las Vegas, where they have a replica Effile Tower. I actually got engaged in the restaurant located on top of the tower! So romantic! =]

One thing I love about IKEA are their large loft sized windows! Especially on a beautiful sunny day like yesterday, this was a picture perfect capture!

My mom is a pasta junkie, so once she saw the penne with marinara sauce, she was a happy camper! I almost got beat up by her fork, trying to capture her “lovely mess”! =] She really enjoyed it!!

Here’s a glass of my refreshing lingenberry drink! Loved this stuff, filled with lots of lingenberry flavor, and loads of sugar! =]

I tried to make more healthy choices, so made myself a side salad of cherry tomatoes, cucumbers and red onions! Very refreshing, and filling!

I usually love ordering the chicken tenders or Swedish meatball dish, but since hubby reminded me of eating healthier, we both got the salmon dish with mixed carrots, and those two yummy vegetable patties! Anyone know the name of that? I’m too lazy to look it up? =] The whole dish was delicious, especially that sauce they put on the whole dish! Will get this again, for sure!

I was so thrilled that many people enjoyed the Blueberry Banana Bread Recipe! I hope that you make it, and enjoy it as much as my family and I did! =]

Now, it’s time for me to clean out my overflowing closet, and figure out what I need to keep and donate. I’m so excited for my trip to Lake George tomorrow, and hope that it will be filled with lot’s of fun and much needed rest!

Blueberry and Banana Bread

Since I’ll be going away this weekend, I want to make sure that I won’t be wasting any fresh food in the fridge. After I went shopping last week, I have so much produce in the fridge, it’s a little crazy! I decided on putting my blueberries to good use, and making some Blueberry and Banana Bread! I’ve never baked with blueberries before, but I’m a huge banana bread baker! I used to make my parents 4 loaves a week, to bring along to their golf trips. Since then, I’ve tried making my banana bread with lots of much needed changes! For one thing, I slash the amount of butter I use, and also have changed to using I can’t believe it’s not butter sticks. I use unsweetened applesauce and also cut out the amount of sugar, by 1/2. Here’s the recipe for the blueberry banana bread, and get ready to have your home filled with lots of sweetness! =]

Blueberry Banana Bread:

Ingredients:

2 cups blueberries

3 ripe bananas ( I used frozen bananas and put it in the microwave for 1 min and 30 seconds)

1 small container of apple sauce, unsweetened

1 tsp vanilla extract

1/2 cup regular sugar

1/4 cup of agave nectar

2 eggs, extra large

2 cups of unbleached flour

1/2 cup oats

2 tsp baking soda

1 tsp salt

2 Tbsp flaxseed, ground

2 Tbsp wheat germ

Directions:

1. Preheat your oven to 325 degrees.

2. Mix the sugar,agave nectar,  butter, applesauce, and vanilla. Then mix in the following and mix, then add the next. banana, eggs, blueberries.

3. Mix in your flour, oats, salt, baking soda. Give it a good mix, until the flour is all mixed well. Don’t over mix the batter, or it will become too stiff.

4. Pour your mix into a baking pan or loaf pan. Bake it for 1 hour to 1 hour and 20 mins. Make sure to test out your bread by placing a toothpick or a fork in the middle of it.

Let it stand for at least 15 mins, but if your like me, DIG IN after a minute!  I had my slice with some frozen yogurt with mangos, strawberries, and blueberries! =]

Back to work and July 4th Plans!

Where the heck was I when stumbleupon hit the internet? This site is truly amazing! I love how I signed up and checked off my likes and interests, and now my weekends will be taken over by this site! ( I have a wonderful life, thank you very much! ) Take a look at what I stumbled on:

[Source] The Neuschwanstein Castle was built in the 19th century. And in every fall the had running water, toilets that automatically flushed, and a heating system. Beautiful castle! I love it =]
While having a wonderful and relaxing weekend, I was asked by my parents to work for them, and manage one of their stores.  Making the decision to go back to work for them was not an easy.  One of the reasons why I left, was because I wanted to study and get my license for real estate. I wanted to step into a different career, something that was different from the retail, food industry world. I felt like I needed to take a break from that world, and find myself. Being that I worked for my parents since I was 14 years old, everyone who knew me, associated me with the store. I didn’t have my own identity. I didn’t know if that was what I wanted to do. While accepting my old job back, I knew that I needed to focus on what is right for me and my life. I needed to grow up, and know that I cannot start something without finishing it. There is no one who will pick up my mess and clean it up for me. I promised myself that I will keep studying for the exam, and take it, before September 2011.
The love that I have for my parent’s business is really a love/hate relationship. I love the thrill, the excitement, the people, the goals, the energy of the business. I hate the stress of finding good employees, the sometimes grouchy customers that will never be happy with your service, and then the pushy vendors, who try to sell you with lots of New York attitude. I’ve got to say that it’s almost like a drug. Especially since I know everything about the system, and can feel confident enough to run the store with my eyes closed. No matter how many times I try and move on to something else, I am always going back to where I started. Maybe, that is who I am… Maybe I just need to suck it all up, and not run away from being a grown up.  Well, wish me luck! I’ll be starting after the July 4th weekend! =]

Something awesome for this July 4th weekend is that I’ll be going away to Lake George with hubby and our play date pals!

Source This will be my 2nd time going, and I am so excited to just get away and relax! The last time I went, we were taken on a speedboat, swam in the lake ( well, I didn’t because I was too scared, but hubby did! ), made a corona commercial, and just RELAXED! Here’s a pic of my corona commercial:

Can’t wait to get there, and enjoy the beautiful air and water there! =] It’s going to be filled with lots of wine, beer ( for me! ), good food, good friends, and maybe a little shopping!

Source I’ve heard that they have great wines, and on their main site, it says that you can get 7 tasting of wines for $5.00! Plus a souvenir glass. Now that’s a deal! :)
After doing some research on Lake George, I needed to grab a bite! Since we had chinese take out last night, I had leftovers for lunch!

I had 1/2 cup of shrimp/veggie fried rice, 1/2 cup broccoli/shrimp in garlic sauce, and 3 sweet baby bell peppers! So filling and yummy! =]
With not getting in a workout this morning, hubby and I agreed to go to the gym tonight. We made a schedule last weekend, on how many days we will go to the gym, and even bought a dry erase board.

The good old days…+ MOCHI!

Happy Saturday, everyone! Unbelievably, I woke up super early, ( 8a.m.), just because… Now, that just reminds me of the good old days, when I used to wake up in the crack of dawn, just to watch some Scooby Doo! Sadly, I woke up and put on those same channels that I used to watch cartoons on, and was bombarded with news shows, like good morning America, or the today show, and etc… What the heck happened to our cartoons?? The good old days were not too long ago…

Have you noticed changes from your childhood, that meant a lot to you, but are gone now? Totally sucks! I am singing the transformers theme song in my head right now… “transformers… Robots in disguise…”

After downing my usual concoction of lemon water juice and coffee (with half and half pls!!), I made myself a delicious bowl of Greek yogurt with peaches, chia seeds and MOCHI!! You guys know what mochi is? For those that do not know:  From wikipedia:

Mochi can also be prepared from a flour of sweet rice (mochiko). The flour is mixed with water to a sticky opaque white mass that is cooked on the stovetop or in the microwave[2] until it becomes elastic and slightly transparent.

This product totally rocks! If you ever get a chance to try it, when you go to your fro yo stores, definitely put this in! You will not regret it! Yum a Lum! :)

Speaking of yesterday’s grocery trip. I’ve said that my freezer hated me for stuffing it with so much frozen foods, but I can now proudly say, my refrigerator hates my guts! Come on take a look, why don’t you:

I am planning to do some cooking today with most of the items in the fridge, so hopefully, it’ll look better by the end of the day.

My new find+Korean Spicy Pork Stir Fry

My #1 new find this week has got to be a well known blog: Carrots'n'Cake . One of the main reasons why I am in love with Tina’s blog, is because she makes us, the readers so welcomed. She has so many posts that are useful, like how to be a better blogger, delicious recipes , workout ideas, etc. Whenever I read her posts, I am filled with so much emotion, whether they be joyful, happy, and sometimes even sad. ( Like in her recent posts, where she mentioned that she wasn’t feeling well).  She is a true inspiration, and yes, I have to admit that I wished I would of found her blog earlier, but sometimes good things come when you wait. Maybe I just wasn't ready to read her blog, and understand how great of a blogger she really is. All in all, Tina's blog is awesome! =]

One thing I found while checking out her back posts was a site called : Doggelganger . You upload or take a pic from a webcam, and then this site has a software where it matches was kind of doggy you look like!! I had to do it a couple of times, to get the right percentage, and so the scanner could recognize my face. Unfortunately, I have no idea how to post up my results, so just to let you know, I had first matched up with a dog named Pebbles, and now I was matched with a dog named Bonnie.

What are your matches? Do you look like them?? :)

I should make an announcement! I am currently typing away on my notebook, using the windows live writer! This is absolutely fabulous! ( I got the tip to use this program from one of Tina’s posts, on how to write a post,  when your not home! ) This program makes it so much easier for me to write a post, and when I get home, or have internet service, I can upload it to my blog! AWESOME :) This is especially exciting, because I feel more creative being away from home. Currently, I am waiting for my mother in the car, while she is getting her teeth extracted! OUCH!! :(

One of my worst fears in life is the dentist! I really hate the dentist… Ever since I was a little girl, something about getting my teeth pulled out, was not cool with me! I just did not want that baby teeth outta my mouth! Eventually, I had to get braces, and that in itself was a nightmare! After my 3 long years of braces, I got my retainers, and I accidently stepped on it, which made it not fit into my mouth. But because I was scared of going back to the dentist and getting it fixed, now my teeth are not perfectly straight! I know.. I’m  a dumb-Ass… The smell of the dentist office makes me feel all nauseous, and gets me feeling dizzy. Then the sound of the drill, or just him poking into my mouth, giving me a “nice” cleaning… UGH, no freaking way! I totally need/want to be put under, for whatever routine needs to get done in there. I wish I could find a dentist, that knew how I felt…

Do you guys fear the dentist, as much as I do??

My workout for today was fabuloso! I did a zumba workout at home, with the dvd called Target zones Cardio+Glutes.

This workout got me feeling so good, and after 30 mins, I was pooped! I’ve been getting decent workouts at home, but hubby hasn’t been getting anything in, and he’s been feeling terrible. After hubby came back from his trip, we both felt so tired and couldn’t find the energy to get up in the mornings for a workout. Not to worry, we had one of those “talks” last night, and we need to set down a program where we can get through with for at least a month. Usually, after a month or so ( 20 days or more), our bodies and mind can adjust to a new program, or lifestyle change. That is my major goal! To get with a new program for my healthy lifestyle change. This December I am planning a trip to Hong Kong/China with my hubby, to meet with his relatives. I want to feel good about myself, and be in a healthy weight.

Are there any goals/future events that you have planned to be in a healthy weight/ or just want a lifestyle change?

And now, the recipe for Korean Spicy Pork Stir Fry- Jeyuk Bokkeum jeyuk dinner

Today is the day my hubby has been waiting for! His favorite Korean dish is Jeyuk bokkeum ( he calls it "kogi" which means "meat" in Korean), which is a spicy marinated pork stir fry. He's not very picky, so if I were to make this dish, every night, he would be a happy camper! I'm the problem, folks! I can't eat the same thing more than a day and half. Meaning, I can make something for dinner, and eat it for lunch again. Then that's it! The most I can do is two days... Oh, well~ :)

So, when it comes time to make this dish, I usually double it up, and put half of the recipe into a freezer bag, and keep it in the freezer, for another night.

Every korean knows this dish, and a lot of times, they make it differently than one another. I usually like to eat this with tofu, but since I haven't been to the asian markets for awhile, I don't have any at home. For those of you, who love tofu, and buy at the regular supermarket, stop right there! Go and check out your local asian markets, because the different tofu packages they have are so much better, in quality and price! Sometimes, I can get a package of tofu for .75 Cents! Yeah, you read right! I remember seeing an itty bitty package of tofu at shoprite, for $2.79! What the heck... That's no good, right there! 

Let me get on with it, and give you this recipe, that my mother has taught me a million times, but I'm sure I'm forgetting something! ;)

Recipe for Hubby's Kogi

Spicy Pork Stir Fry- Jeyuk Bokkeum

Serves: 2 Hungry ppl or 4 ppl

Ingredients:

2-3 cups of pork ( I used pork shoulder, but sometimes my like to use pork belly, cut from the asian markets)

1 small onion, sliced into half moons

5 garlic cloves, chopped

1/2 Tbsp chopped ginger ( use ginger powder if you don't have any fresh ginger)

4-6 Tbsp of korean hot pepper paste

1/2 Tbsp of korean chili powder

1/2 cup apple sauce, unsweetended

2 Tbsp of sugar ( I used regular sugar)

1 tsp kosher salt

dash of black pepper

2-3 Tbsp cooking wine ( I used Pinot Grigio, of course while taking sips on the side! )

2 green scallions, chopped

1 1/2 Tbsp sesame oil

2-3 Tbsp soy sauce, low sodium

sprinkle of sesame seed towards the end

Directions:

1. Cut your pork into thin slices. ( Look at the picture where I show you how thin the slices are, for reference)

2. Wash your pork, in cold water, about 5 times. And drain out all the blood, and water. In a mixing bowl, add in your salt, pepper, ginger, wine. Give it a mix, and start working on your sauce.

3. In another bowl, put in: soy sauce, korean pepper paste, korean chili flakes, sesame oil, garlic, apple sauce. Give it a good mix, and add this sauce into the pork bowl. Mix it well, and cover the bowl to marinade it in the fridge. 20 mins to the next day.

4. In a heated pan, put in some oiive oil and put your meat mixture into the pan. Stir fry the meat in a medium to high heat.

5. When the meat is cooked, add in your chopped scallions and sesame seeds on top. Your ready to eat!!

You have a lot of different options to eat this.

Rice, tofu, wrap it up in green veggies ( which I will be doing tonight), broccoli, etc! Be creative, and enjoy it :)

Sweet Potato Pie

This is adaptation to Skinnytaste Recipe . I say adaptation, because I didn't have any pumpkin spice ( so I made my own blend), and didn't add any sugar, and it tastes fantastic! To be honest, I forgot to add in the sugar! Well, I didn't have any light brown sugar that Gina used, so I took out my Agave nectar to use. But just as I was pouring in the batter into the pie shell, I looked over at the agave and said "oh, Oh..."
You really do not need the sugar! It was creamy, dreamy, and delicious! I made some Vanilla Fro yo to go along with it, and OMGosh... It was sOOooo good!
You've got to try it!

Those marks were made by my knife, to check if it was ready! And believe me, that baby was ready!! :)


                                               Sweet Potato Pie- Adapted from SkinnyTaste

Ingredients:
3 medium Sweet Potatoes
2 Tbsp butter ( I used I can't believe it's not butter )
1 store brand deep dish pie crust
1/2 cup 1% milk
2 eggs
1 tsp vanilla extract
1 tsp ground Cinnamon
1 tsp of pumpkin spice ( I blended 1 Tbsp of ground cinnamon, 2 tsp of ground ginger, and 1/2 tsp nutmeg- Found here )

Spices I used to make a blend of pumpkin spice.

Directions:
1. Wash your sweet potatoes and boil it skin on, until it's fork tender.
2. Run it in cold water, and peel off the skin.
3. Preheat the oven to 350 degrees.  Put the sweet potatoes
in a food processor to smooth it all out.
4. In a mixing bowl, add the sweet potato butter, eggs, spices, and milk
5. With a electric whisk, whisk it all up, until it looks nice a creamy.
6. Pour your batter into a pie crust and put it into the oven for about an 1 hour to 1 hour and 15 mins.
Check if it's ready, by putting in a knife and see if it's thickened. I served it with vanilla fro yo, but Gina served hers with cool whip!

Thursday with Mommy

I missed writing a post last night, due to feeling under the weather. I've been feeling like I'm catching a cold, since Monday. And with me hanging out with my mom, at her store, and being put to work ( which was actually quite enjoyable! ) yesterday, I just didn't have enough energy to write a post.
I had a fun time chilling with mommy, and ate not so healthy food! Thank God I put in 30 mins of cardio, before heading out!!

Here is a run down of yesterday's workout and eats:

Workout:
At home, I did 30 mins of Zumba! Love this workout. Not only does it keep your heart pumping, and get you sweaty! The music and dancing just gets you into a happy zone, which is great!

Breakfast:
Coffee with some homemade sweet potato pie! Click for the recipe =]

Lunch:

So glad I got this yogurt! It was the last one on the shelf, and adding the nature valley choc granola, OMG, to freaking die for!! It was so creamy, and crunchy~


Throughout my day, I enjoyed a 20 oz vitamin water power c! I would of preferred to get the zero calorie option, but the store only carried the lemonade one.. Nope, I want my dragonfruit!


I had this for dinner, with my mom at a Korean restaurant. It's called jjamppong. This dish was filled with seafood, noodles, with a spicy broth! LOVED IT =]

Here's a quick fact about it from Wikipedia:


  • Jjamppong (hangul: 짬뽕), a spicy noodle soup flavoured with onions and chili oil. A form of jjamppong is also the local Chinese speciality in the Japanese port city of Nagasaki (see Chanpon). The noodles are made from wheat flour.






  • Then mom decided to go into Costco, and give me a little treat! I only got to eat the choc/peanut part and gave the rest to hubby, who couldn't eat the top, cause of peanut allergies. I thought it was pretty darn good, and hubby looked like a little kid, smiling and eating the drumstick! That waffle cone looked really good. I totally wanted to steal it from him...


    I also ate a Jamaican beef patty, from 7-eleven, with some cheese added inside, and DAMN that thing was good! My mom and I first split it, thinking we weren't going to eat that much. My mom was flipping out on how good that thing was. She bagged one to go! =]

    This is a picture of a beautiful pink hydrangea! Once of my favorite plants, and also favorite color! I always associate my mom with flowers, and plants, because she loves them so much! She really cares for them like children, and talks to them =]


    Spending time with my mommy was lots of fun! Sometimes, as we get older, we tend to forget how it is to spend time with our parents. I'm 29 years old, and my mom still treats me like a little girl. I smile at that, because I know that I will forever in her mind be her little one, even though she's shorter than me!! hehe

    Question for you:
    Have you been spending time with your parents or guardians? We're all busy, but sometimes a little phone call, will give them a smile, or if you are really up for it, how about stopping by their house this weekend, unannounced! =]

    Asian Baked Salmon

    I first came over this recipe on Allrecipes.com after searching for salmon recipes. After seeing the reviews of this recipe, and seeing that I had most of the ingredients on hand, I made it.
    With a little adds of my own ingredients, this recipe is a household favortie!

    Let me stop blabbing, and get on with the recipe! :)

    Asian Baked Salmon: adapted from Source
    Serves 2 hungry people

    4 fillets of salmon ( I use frozen fillets from costco. Do not be afraid to use frozen fish. It's wallet friendly, and tasty at the same time! )

    1 Tbsp olive oil

    2 Tbsp of rice vinegar

    2 Tbsp of soy sauce, low sodium if you have

    1/2-1 Tbsp brown sugar

    1 tsp grated ginger, fresh or powder

    4-6 garlic cloves, chopped

    1 tsp sesame oil

    dash of black pepper

    1/2 small onion, chopped finely


    Directions:

    1. In a mixing bowl, add all the ingredients except for the salmon. Mix it all together. For the salmon, make slashes one side, for the marinade to give it more flavor.

    2. Place the salmon with the slashes down on a baking dish to marinade with the sauce. Put into the fridge for 1-2 hours.

    3. Preheat your oven for 350 degrees. Bake your dish for 20 mins and for the last 10 mins, put your oven temp to high, or broil. After the 20 mins, your fish should be done, coming out bubbly and your salmon should have a nice crispy top!


    I served the salmon with grilled asparagus, tomatoes, with roasted broccoli/cauliflower! :)



    Bestest Workout Ever & Pan Salmon Pizza

    Is bestest a word? Today, I woke up feeling so crappy. Feeling like the world was on top of my shoulders, and having a low supply of air. That's how I felt. But fear not! After saying adieu to hubby this morning, I put on my workout clothes and headed into my studio! ( my studio= my living room, transformed into my studio)
    I borrowed a workout dvd from my sister, and boy, am I glad I did! It was seriously a great workout, that made me feel like I pushed myself to the top!

    I wasn't sure if this workout dvd would be any good...


    This is a Tracey Mallet Dvd called The Booty Barre- It totally kicked my booty, and I feel awesome!


    I'm smiling cause I know I had a great workout! :)

    I wasn't kidding when I said this workout kicked my booty. I literally had to stop to catch my breath, and then rewind to go back to the workout. All in all, this is a great dvd and I'm a happy girl!

    I'm really excited to share this recipe Pan Salmon Pizza. I got inspired by watching Master Chef last night, and saw a contestant make a salmon tart. It looked so comforting, and delicious. I believe she made the tart with a puff pastry, so being that I didn't have any of that around, I said why not make it into a pizza! I had all the other ingredients, since my a Asian salmon dinner last night, so I was all set!

    Here's my pan and the pizza crust by Betty Crocker ( LOVE HER )


    I sprayed nonstick spray in the pan, and sprinkled corn meal flour on the bottom, to add a little crunch in my pizza crust! ( Thanks, Giada! )


    This is the pizza crust mix, that I added 2 tsp of ground flaxseed! You cannot taste the flaxseed, and adding it like this is just  good for you!!

    Pan Salmon Pizza:
    Serves 1- 4 :)

    Ingredients:

    1 package of Betty Crocker pizza crust
    1/2 cup hot water
    4 tsp of ground flaxseed
    1-2 ounces of cooked salmon ( canned, or smoked salmon would be great too! )
    1/3 sliced onions, very thin slices
    1/2 cup part skim ricotta cheese
    1 Tbsp garlic powder
    1 tsp italian seasoning
    1/2 tsp hot red pepper flakes ( you will use 1/2 for the ricotta mix, and 1/2 for onions )
    any veggies you have on hand. Leftovers are great for this dish ( I used asparagus, and a mix of broccoli/ cauliflower )
    2 Tbsp flour

    Directions:

    1. Preheat you oven to 450 degrees. Follow the directions for your pizza crust. Add in 2 tsp of flaxseed, and  use the 1/2 cup of water for your crust.

    2. In a small mixing bowl, add in the ricotta, spices, and stir.

    3. Prepare your pan with the cornmeal on the bottom, and add in your pizza crust, using the flour to help spread it out. After flattening out the dough, use a fork to poke holes around the dough, so it doesn't poof up in the oven.

    4. Add the ricotta mix into the dough. Follow it by adding in your salmon, and veggies all around it.

    5. Get your pizza into the oven for 15-20 mins. And after it's done, enjoy it with a nice cold beverage! :)

    This dish was so amazingly good! I loved how that it reminded me of comfort food, being savory and sweet from the salmon! This is a keeper !! :)


    While waiting for my pizza to get done, I made myself a tall glass of iced coffee!
