Beef and Vegetable Soup - Quick

It may be going up to 90 degrees, here in New York, but with my air conditioner pumping, and my pandora playing some music in the background, soup was on my lunch menu! I had made a dry rubbed beef roast last night, and had some leftovers for today's lunch. This came together very quickly, and the taste was just right!



Beef and Vegetable Soup:

Ingredients:
1 small carrot, chopped
1 small celery, chopped
1/2 small onion, chopped
1 cup frozen petit peas
1 medium red potato, peeled and chopped
2 slices of your dry rubbed beef, chopped ( you can use any kind of leftover beef that you have, but remember that the flavors will not be the same) * about 1 1/2 cups
3 cups of water
3 cloves of garlic, chopped
dash of kosher salt

In a medium pot, add your chopped vegetables, garlic, water and a dash of salt. Bring to a boil, and add in your meat with the peas. Turn it down to low-medium, and bring to a boil. When it comes to a boil, turn the heat off, and let it sit in the pot, covered for 5 mins. Grab yourself a bowl, and dig in!


After my soup, I had to make a quick run to the supermarket! Here I am, being silly!

I find my one dark eyebrow, hilarious! -=D
